We’ve gone old-school Parisian with the perfect steak frites. Traditionally this would be served with béarnaise sauce, one of the cornerstones of French cooking.
However, in the interests of giving you a sauce you can cook on a more regular basis, I’ve swapped in a tarragon aioli recipe with the same sort of vibe. Béarnaise is gorgeous, but is so rich it’s not something you can afford to indulge in too often.
In my opinion, the French are one of the world’s salad masters. This Lyonnaise salad with crunchy, smoky bacon lardons, fresh and slightly bitter frisée leaves, delicious croutons, a perfectly poached runny egg and a kickass dressing is not just a salad, it’s a feast. And last, but not least, is a dish that has scared cooks for years – the soufflé. [...]”
