The Health Hazards of a Fast Food Diet
• Dr
MERCOLA. The Health Hazards of a Fast
Food Diet, Care2, February, 26th 2012.
Abstract:
This
article shows the risks of fast food on health, based on a recent report by ABC
News.
Quotation:
« If you value your health, you would be
wise to avoid fast food restaurants at all costs. Not only does the fast food
diet promote high cholesterol, hypertension, heart attacks, obesity and
diabetes; such foods are also laden with added chemicals, and virtually all
animal based food comes from factory farms. The latter issue is highlighted in
a recent announcement that McDonald's and Target will no longer purchase their
eggs from Sparboe Farms. »

latter.
Quotation:
« In the food court of Ball State
University's Student Center, just sniffing distance from where mass-produced
burritos are rolled out by countless thousands, chef Jason Reynolds offers
gourmet cuisine at fast-food prices. In a student culture where dinner fare

dotted with rubies. »

Congresswoman's call to reveal antibiotics in fast food
• Congresswoman's call to reveal antibiotics in
fast food, Meatfreemonday, February, 21th
2012.
Abstract:
Given the
public health crisis a member of the U.S. Congress has invited companies’
manufacturer of products for fast food restaurants to talk about their methods
of manufacture.
Quotation:
« Companies and businesses that make and
sell fast food have been asked by a US Congresswoman to come clean about their
policies on antibiotics in meat.
Louise Slaughter - who is a microbiologist as well as a politician- has
written to more than 60 fast-food producers, processors and grocery chains,
requesting that they disclose how much of their meat is antibiotic-free and how
much is from animals routinely administered antibiotics.
"Very simply, customers have a right to know what is in their
food," she said.
"The US is facing a growing public health crisis in the form of
antibiotic-resistant bacteria, and information about how these companies are
contributing to its rise or resolution should be available to
consumers." »

Study begins to unlock the development of child taste preferences
• GRAY,
Nathan. Study begins to unlock the
development of child taste preferences, Food navigator, January 28th
2012.
Abstract:
This paper
presents a study which showed that consumption of fast food has a significant
impact on the lips of children who develop poor dietary preferences.
Quotation:
« The findings, published online in the
journal Appetite suggest that children with detailed mental representations of
fast food and soda brands – as developed by advertising and experience – have
higher scores on an ‘added flavour’ sugar/fat/salt (SFS) liking palate.
“If taste preference is playing a role in the obesity epidemic, how can
we identify a starting point for change? … It seems that we must begin by
addressing the development of palate and the preference for particular foods
and thus, we must start with young children,” said the authors, co-author Dr.
T. Bettina Cornwell from the University of Oregon.
“This research on child palate contributes to the potential for change
by firstly identifying that early food-related behaviours are important to the
discussion and by offering a new focus for food manufacturers, policy, and
future research,” they said. »

A new Three-Star French Restaurant
VINES, Richard,
Michelin Crowns Three-Star French Restaurant as Japan Leads, Bloomberg Businessweek, February 27, 2012.
Abstract : This article deals with the new three-star French restaurant, “Flocons
de Sel”. It shows the prestige of France and it compares the situation between
French and Japanese.
Quotation : “Michelin today awarded a third star to one more restaurant in France,
taking the total to 26 in the home of the guide, which drops further behind
Japan for top- rated establishments. The new accolade goes to Flocons de Sel,
housed in a chalet in the mountains of Megeve, in the Rhone-Alpes region of
southeastern France. Chef Emmanuel Renaut is known for modern seasonal dishes
such as a mille-feuille made with vegetables. “With an expanding array of
culinary trends and a constant focus on ingredients, high standards of cooking
and renovated interiors, the French restaurant industry is being revitalized
and transformed,” Michelin said today in an e-mailed release. Ten more
restaurants were awarded a second star, taking the total to 83, and 58 gained
their first, making 485. The 26 three-star total compares with 32 in Japan: 17
in the Tokyo region and 15 in the west of that country. Japan took the lead
last year, when it had 26 three stars, versus 25 in France. Flocons de Sel “has
become an indispensable destination for lovers of mountain scenery and fine
cuisine,” Michelin said. The new two stars in France include two in Paris: Sur
Mesure par Thierry Marx, in the Mandarin Oriental hotel; and L’Abeille, in the
Shangri-La, under chef Philippe Labbe. Also in Paris, single stars go to Kei, Sola, La
Truffiere, Le Diane, Le 39V, Le Lumiere, Cobea, Le Quinzieme-Cyril Lignac,
Akrame, Shang Palace, and Les Tablettes de JL Nomicos. British chef Gordon Ramsay retains two stars for his restaurant in
Versailles.”

Le Grand Bistro
COHEN,
Elisa, Le Grand Bistro provides comfort French cuisine in bistro setting, North Denver Tribune, February 28, 2012.
Abstract : This article presents a french restaurant, “Le
Grand Bistro” which is situated in Denver, in Colorado.
Quotation : “DOWNTOWN – Le Grand Bistro beckons
downtown visitors with the promise of every day comfort French food. Needing
comfort, we visited and enjoyed the ambiance and some of the flavors.
I took my sister to Le Grand Bistro on 15th and Curtis
for a midweek lunch. The restaurant is spacious with a large dark wood bar on
the east and booths and tables on the restaurant’s west side. The dark heavy
wood, old mosaic tile floor and large mirrors give the room a grand spacious
ambiance without seeming ostentatious. The ambiance is inviting, the play
between the black walls with white subway tile, hand drawn pigs sketched on the
walls and rows of green bottles above the cozy dark booths makes the visit
memorable. The music croons American classics for a comfortable sound track to
the cozy bistro atmosphere.
My sister and I ordered the Onion Soup, $8. We enjoyed
its dark caramelized hearty body. It was served with a slice of bread and
topped with Gruyere cheese.[...]”

Masterpieces of French Cuisine
LEBOVITZ,
David, Masterpieces of French Cuisine, David
Lebovitz: living the sweet life in Paris, February 27, 2012.
Abstract : Chef David Lebovitz speaks about his french
cookbooks.
Quotation : “When I moved to France a number of years ago, the
hardest things to part with were my cookbooks. (And San Francisco burritos.)
Some I shipped ahead – which, as readers of my Paris book know, I’m still waiting for today. Some got boxed and
put in storage, and the rest were sold or given away. One of my favorite books
of all time was brought to my attention by a woman who ate in the kitchen at
Chez Panisse a few times a week. Back then, it wasn’t trendy to be seated where
the cooks were working, which are now called “chefs tables” and they’ve become
so popular that restaurants actually put tables frequently in the kitchens and
guests can reserve them. She just preferred to be back in the kitchen with us,
rather than with the rest of the diners. Since we all liked her a lot,
and not just because she regularly brought us in French pastries and Belgian
chocolates, but because she was a lot of fun. She held court at that table for
perhaps a decade and she even entered through the kitchen door when dining with
us because she wanted to be “part of the gang.” She loved to eat everything,
especially lobster and frais des bois (or anything with butter, really), but she had a soft
spot for pastries and her table was next to where I worked, so I spent a lot of
time talking about food with her. Knowing I liked cookbooks, one day she
brought me in a copy of a large-format cookbook from her collection to read – Masterpieces of French Cuisine. [...]”
