"Galette des Rois's recipe"

Abstract : Presents a recipe of the chef Ken Larsen about the "Galette des Rois".

Qutotation : "This delicious, golden, flaky pastry cake encases an almond cream filling. Hidden somewhere within is a china figurine. Traditionally, the person who finds the fève in their slice of cake is the king or queen for the day, and entitled to wear the paper crown that comes with the cake. Pastry chef Ken Larsen of Brasserie in New York City created this recipe.

INGREDIENTS

For the almond cream :
•    7 ounces butter
•    7 ounces sugar
•    7 ounces almond paste
•    2 eggs
•    3 ounces flour
For the galette :
•    14 ounces (2 sheets) store-bought puff pastry
•    2 large egg yolks
•    1 large egg
•    1/4 cup whole milk
•    1/4 cup light corn syrup
•    1 1/2 tablespoon water

DIRECTIONS

For the almond cream :
Cream together the butter, sugar, and almond paste. Scrape down the bowl. Add the eggs one at a time, followed by the flour, and mix until incorporated. Fill a large pastry bag with the cream and create a 1-inch diameter opening by cutting off the tip. Set aside.
For the galette :
Preheat the oven to 350 degrees.
Roll out each sheet of puff pastry to an 8 ½-inch circle. Each circle should be about 1/8-inch-thick. Line a baking sheet with parchment paper and transfer 1 of the circles to the sheet. Starting from the center of the circle, pipe a 5-inch diameter and 1-inch-high mound of almond cream, leaving a border of approximately 1 ½ inches.
Whisk together the egg yolks, egg, and milk in a small bowl until well combined. Brush lightly on the border. Place the second circle of puff pastry over the first, pressing gently against the circumference of the almond paste mound, in order to remove any trapped air.
Seal the edges of the 2 layers by pressing the top edge into the bottom edge. (This will keep the almond cream from running out as it bakes.) Use a sharp paring knife to make diagonal indentations all around the sealed edges, creating a flower effect.
Next, pierce a ½-inch slit in the center in order to allow the steam to escape while baking. (You can make a pattern on top if you wish.) Prepare the glaze by stirring together the corn syrup and water in a bowl.
Place the galette in the oven for about 20 minutes, until it begins to brown. Remove from the oven and reduce the temperature to 330 degrees. Brush the galette with the glaze. (This adds sweetness, enhances the color, and gives it a crispy crust.)
Place the galette back in the oven for an additional 15 minutes, until the crust has risen and is browned evenly. Remove from the oven and cool on a wire rack. The galette is best when served still warm. It should be flaky and tender, and the almond cream center should be moist. Slice with a serrated knife. »

            This article denounces the strong presence of sponsors of fast-food to children which incite to eat unhealthy.

Quotation:

“A saturation of fast food sponsorship of charities and sports events is partly to blame for New Zealand's increasing levels of obesity and type 2 diabetes, according to Waikato District Health Board research.
A discussion paper, Obesity, diabetes and fast food the impact of marketing to children, says indirect marketing such as sponsorship of charities and children's sporting events by fast food chains sent a conflicting message to children about healthy lifestyle and diet.
"One [example] that really struck me was McDonald's sponsoring the children's Youth Duathlon in Christchurch in March last year ... which was quite a big event at the time," said the paper's author, Waikato DHB population health policy analyst Nick Chester.”

According to the study, these games work as a marketing tool: Researchers found that playing these games increases children's consumption of junk food.
Jennifer Harris from Yale's Rudd Center for Food Policy and Obesity led colleagues to conduct a study to determine how many children visit advergame websites and how long they stay; whether playing games advertising unhealthy products was related to unhealthy food consumption; and if games that promote healthy food choices encourage better eating.”

Presents the results of a study which shows 56% persons polled ate at fast-food restaurants at least several times a month. But, the majority of respondents (75%) say the pay more attention to eating healthy now than they did five years ago.

“Indeed, the majority of respondents (54 percent) admitted they feel "a bit guilty" after eating fast food and another 16 percent say they just feel "bad."
So why stop at the fast-food drive thru? Half of the survey's respondents said convenience to accommodate busy schedules and faster meal availability were the top reasons for eating fast food instead of cooking at home. To skip a fast food meal and instead cook a healthy meal at home, 83 percent said it would have to be prepared in 30 minutes or less.

       Is about the first Iranian film festival that takes place at Světozor in Prague. The aim of this festival is to give a better vision of the Iran society and to show the importance of the women in Iranian cinema as well as actresses as movie directors. This festival deals with three categories of films : feature film, documentary and short film.
